99. Von Feissesten shaffdärmlin – On [fatty] sheep gut

Wesh sie sauber, vnd laβ das brunnwasser dardurch lauffen, daβ nichtβ vnreinβ darin bleibe, eyer vnd nideln wol vndereinander geklopffet, ein wenig meyeron, peterlin, shnitlauch vndereinander gehacket rein, wenig imber: vnd gäl pulffer, alleβ vndereinander geruhrt, vnd in daβ därmlin gethan, saltz, pulffer vnd ein kleine handvoll wol gewäshne Rosinlin darin, dan daβ därm lin wolverbunden, windβ vmb die hand, vnd laβ in einer fleish supen kochen, biβ eβ gar lind ist, dan die därmwürstlin im freshen anken mit saltz vnd bulffer braten im düpfflin, so eβ auf beiden braten.

Wash it clean, and let spring water run through it, so that nothing unclean remains in it, beat together eggs and cream, a little [marjoram], parsley, chives cut up and mixed in, a little ginger; and [gäl] powder, mix everything together, and stuff into the gut, add in salt, pepper and a small handful washed raisins, then tie up the gut well, [wind it around the hand] and let it cook in meat stock until it is tender, then put the stomach sausage in a pot with fresh butter, salt and pepper and fry, so that it fries on both sides.

Beforehand, wash clean and allow to soften in water, bind the pieces together in a clean [cloth] so that no foam gets in, allow to cook in a large pot of water with about a [kreutzen] of milk poured into the water,
